This grape
variety is grown in Northern Italy and
very little elsewhere. It has washed
down many a spaghetti Bolognese in the
guise of ‘Chanti.’ Much of the time it
is quaffable with food, slightly acidic
in constitution, and a little deficient
in tannin all of which appears to be due
to the fact that the vine can be
overgenerous in its yields. In
consequence the wine is often light and
undistinguished.
Here is a wine to buck the trend. It is
full flavoured, generously tannic and
savoury with a warm and generous
embrace. It gets to be this way when you
grow it on a wide open trellis in a dry
climate, resist the temptation to water
it, drop half the fruit on the ground,
exclude the rot as you harvest it by
hand and give it serious attention in
the cellar so as to convince Cinderella
that she can indeed carry off the role
of a Princess. Prince Charming is the
