Growing the vine without water results in an extended root zone which provides a great buffer against adversity in the heat of summer, reliable performance from year to year and the ability to ripen the crop speedily. The fruit character is distinctly white peach and this with a tight fine acid structure and a voluminous mid palate defines Karridale Chardonnay. No other variety allows the winemaker so much room to move in terms of flavour modification in the winery. In this wine we have used barrel fermentation in new oak, partial wild fermentation, yeast lees stirring and some solids inclusion in the ferment.

Chardonnay originates in the Burgundy, Chablis and Champagne regions of France. It gave rise to the original ‘White Burgundy’ a name adopted in the new world, to understandable chagrin on the part of the French where the district name defines what appears on a wine label. In the Napa Valley of California growers aspire to produce wines of outstanding interest. Here, the wines came to be known by the name of the grape variety. In Australia it is frequently suggested that Margaret River that sets the pace with this variety producing full bodied complex styles using traditional Burgundian techniques.
