Vintage conditions	Very cool year throughout with a tiny crop set and vintage a month later than usual	Colour Nose Palate	Pale straw with a green hue. An attractive aroma of cut grass, fresh straw, grapefruit bell pepper and cap gun with a note of fruit tingles confectionary. This is a rich, textural, complex wine style. It is intensely flavoured with snow pea, honey dew, lemon butter, grapefruit and lime flavours with a tight zesty acid structure and notable minerality

The grape varieties are Semillon and Sauvignon blanc. At low yield but high flavour levels these varieties are capable of making a wine to stand beside the best Chardonnays in terms of complexity, interest and longevity. That is our intent with this wine.

All the three Hills wines are the product of a single vineyard in the southern extremity of the Margaret River appellation. The country around Augusta offers the most interesting circumstances to grow the whole gamut of grape varieties in Margaret River if not mainland Australia. All varieties respond to uniformly cool temperatures during ripening and in a favourable year we have complete freedom from flavour damaging heat spikes into the high 20s.

We think our trellising arrangements provide the right balance between sun and shade to yield golden coloured fruit with little green chlorophyll content and a low quotient of the accompanying astringency.

Growing the vine without water results in an extended root zone which provides a great buffer against adversity in the heat of summer, reliable performance from year to year and the ability to ripen the crop speedily.

Eva and Maria are old family names going back to the 1850s at the time when two brothers Happ arrived in Australia.

In this wine we have used skin contact, barrel fermentation in new oak and yeast lees stirring.

In a world of collapsing grape prices Semillon and Sauvignon Blanc seem to be immune and that is a great thing for Margaret River. Without going into a lot of detail that might bore the reader it is possible, using these varieties to produce a wine that is fresh, generously aromatic in character, typical of Margaret River and should be drunk within a year. I speak of the 'Classic'. It has its place and that place is an ever expanding one.

On the other hand, at low yield but high flavour levels these varieties are capable of making a wine to stand beside the best Chardonnays in terms of complexity, interest and longevity. That is our intent with this wine

On my first trip to Margret River (October, 2010) my Perth born wife (we currently live on the Gold Coast) wanted to show me some well-known wineries.
She introduced me to Happs Winery which also sold the brand 'Three Hills'. I was instantly drawn to this range as our last name is Hill and we were
expecting our first child (baby girl). Hence we were to become the 'Three Hills'. I bought the red hat with 'Three Hills' on it and wore it proudly
on the day our little angel was born at the Gold Coast Hospital last month. We met in London in 2008 which made this wine seem more special as well
as my wife and little girl both have the same middle name 'Maree' spelt slightly different. Once I got the girls home two days later we were able to
drink the 'Eva Marie' and enjoyed every sip. Thank-you Happs and 'Three Hills' for making and naming this wine as it means so much to my new family.
We are back in Perth for our little one's baptism later this year and hope to come down to Happs and purchase another 'Eva Marie'. Thanks again.

Last Wednesday, 23 February 2011, we were on a mission: find the best sem-sauv on offer this year in Margaret River. Ten years ago this blend
literally changed our lives. It was new to us, as was Margaret River, and the wine represented the unique blend of beauty, pleasure, finesse and
openness of this place. We decided it would be a permanent part of our lives, and the next year we were lucky enough to establish roots (mentally,
emotionally,and viticulturally)here. Every year we find our favorite sem-sauv and celebrate it. rnThis year's favorite is Eva Marie. The wine is a
bit more demanding than some previous choices. Perhaps we are growing up. Perhaps Margaret river is. But the complexity of this wine, with its
almost allusive hints of grass, melon, lemongrass in a rich base of citrusy acid places it, and us, here, and we celebrate with Eva Marie.
