Semillon is a Bordeaux grape which probably shares some of the genetic character of Sauvignon Blanc. Although the two vines have very different physical characteristics they share some herbal, grassy, capsicum flavour notes that will occasionally have tasters confusing one with the other. The expression of flavour depends upon environmental conditions during ripening. The grassy herbal notes so pronounced in the early stages of ripening with all the Bordeaux grapes diminish with maturity. If ripening is gradual the herbal flavours gradually diminish and more attractive truly varietal characteristics emerge. Semillon takes on a character reminiscent of figs. This is best expressed in bunches that see a modicum of direct sunlight leading to berries of a golden appearance rather than the green of chlorophyll.
The grapes used for the style we call simply 'Semillon' are the healthiest and least damaged, from our lowest yielding vines where varietal flavours are most pronounced. The wine is fermented in stainless steel and after fermentation the wine is left to age on its yeast lees for 3 months to develop a creamy texture and greater complexity. The wine is an exercise in patient application to duty stimulated by ambitious intent. |
