Vintage conditions	An good vintage with moderate and consistent temperatures after a warm February.	Colour Nose Palate	Pale straw with a shade of green. Very fresh, very clean and no hint of oxidation whatsoever. A complex aroma that displays the buttery characteristics of the wines malolactic fermentation with lime and stonefruit, lemon rind and apple cider notes and some lifted bready, nutty and yeasty aromas. Buttery cashew characters combine with figgy fruit flavours and a creamy palate to yield a wine of considerable difference. Thankfully the wine shows no obvious oxidative characters, which is testament to our level of care in making this wine. The wine is full flavoured and the finish exhibits some yeast and sweet lemon butter with crisp acidity.

For some drinkers this wine will be preferable to our regular Chardonnay simply because oak plays a lesser role in it’s constitution. If you suffer from an asthmatic type response to wine, headaches or other inconvenience this wine our PF White may change your life.This is the ninth PF White that we have made and we have learnt some new tricks that must unfortunately remain confidential. Making wine without the use of sulphur dioxide is really frontier stuff and it is for the brave, the foolhardy ....... and the careful. However, we can let you know wood is playing a part in the elaboration of the wine with the use of both French and American oak.

The wine is made from Chardonnay from our vineyard in Karridale and goes through 100% malolactic fermentation – a necessity without sulphur dioxide. A new state of the art filler and screw capper protects the wine from the oxidative effects typically encountered at bottling. The rest must remain secret. As every woman knows, you don't reveal everything. A little mystery adds to the intrigue and interest.

Expected life: Minimum of two years in good condition. If you enjoy the flavours that wine gets as it develops, give it three.

Preservative Free White 2004

Adrian Read of www.sydneycafes.com.au: Plain, straightforward, easy drinking white wine, great for a picnic, poolside or day at the beach. This is not a “bodice ripper,” think Fragonard, spring meadows, stolen kisses, some light fooling around, nothing heavy. Great stuff from the Margaret River appellation, this PF White is made from chardonnay. The wine is entirely tank-fermented. It is soft and generous in its flavours in line with winemaker Erl Happ's personal preference. The lack of preservatives is testimony to careful wine creation. Ronnie and Meghan liked it very much while Adrian prefers his drink a bit more complex.

Preservative Free White 2000

James Halliday: Bright green-yellow, showing no sign of browning; the bouquet is quite rich and solid, with yellow peach, and the palate, likewise, has stood the test of time remarkably well, showing no oxidation or mousiness. A 50/50 blend of Chardonnay and Semillon which one would normally seek to drink in the year of vintage. Rating 84 Drink 2003 Date Tasted Feb 02

Thank goodness I have found you - in my maturing aged years some things in my body have started to retire much too early and drinking my favourite
wines looked like becoming a distant memory. A sip and maybe one other, the ticking of my heart became the only noise I could hear - I was doomed to
drinking water........but then I decided to try something different and have never looked back - I was amazed to find you and am in heaven again with
that beautiful oak flavour that I love - it really is exceptional. One sip of this crisp, fruity, oaky refreshing liquid is enough to relax into the
